Naked Persian Burgers (with a tomato and cucumber salad)

My tour of The Skinny Taste cookbook continues with this Mediterranean recipe. I made a few substantial changes to the original recipe and it tasted great. The recipe called for ground turkey and I used beef. By using beef, the patties are essentially Turkish kofta.It also called for mint and parsley. I didn’t have either, so I used cilantro.

This meal is great if you’re in the mood for a quick Mediterranean feast. This recipe makes four servings that are 400 calories each. You can reduce the calories by using low fat ground turkey.

  • 3/4 cup grated zucchini, strained to remove water
  • 1 lb of ground beef (I used 80% lean)
  • 1/3 cup red onion, minced
  • 3 garlic cloves, minced
  • 1/4 cup bread crumbs
  • 1/4 cup chopped cilantro
  • 2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/4 tsp all spice
  • 1/4 tsp salt

Mix all the ingredients together and form into 8 patties. Add a splash of olive oil to a frying pan and cook patties over medium high heat. About 4 minutes per side.


  • 1 large cumcumber, chopped
  • 1 pint cherry tomatoes cut in quarters
  • 1/3 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 4 Tbsp feta cheese
  • 1 Tbsp olive oil
  • 1/4 tsp salt

Mix the ingredients and enjoy
